Milk Coagulation Properties: A Study on Milk Protein Profile of Native and Improved Cattle Breeds/Types in Sri Lanka

This study was conducted to assess the variations of milk coagulation properties (MCP) among two native cattle types, e.g., Thamankaduwa White (TW), Lankan (LC) and improved breeds, Friesian (FR) Jersey (JS), in relation distinctive protein compositions. MCP traits, including rennet time (RCT), curd firmness, meltability yield, were measured. The profile each breed/type analyzed using capillary zone electrophoresis. Significant differences (p < 0.05) observed breeds/types RCT. TW had longest shortest RCT, respectively. There no significant difference firmness four breeds/types. highest coagulum yield recorded for milk, followed by LC, JS FR. values. As revealed profiles, κ-casein concentration significantly higher compared other three None fractions showed overall results indicate superior emphasizing value breeds which could be exploited development niche dairy products while supporting conservation effort gene pool.
